Food is an essiental identifying element of every culture. Examine the story of food in America, looking at how Americans and immigrants have changed their cooking and eating habits over time, often in response to each other and the local ingredients available. Through readings, food tastings, and lively class discussions, you will take a memorable, and tasty, journey.

Note: Students must purchase the book We Are What We Eat: Ethnic Food and the Making of Americans by Donna R. Gabaccia (not included in class fee).
